At the Invitation of director Todd Bedenbaugh, the office of Health& Nutrition travelled to Batesburg-Leesville middle school to conduct an in-person culinary training to promote the use of fresh South Carolina produce from recipes in our South Carolina Health-e-Pro nutritional analysis software. OHN’s Farm to School coordinator, Ben Sease, and Education Associate Nicholas Eaton, along with Michael Cranford from the South Carolina Department of Agriculture, visited to conduct the training as part of Lexington 3’s pre-school year training activities.
The fresh produce used were 3 South Carolina favorites: Peaches, Sweet Potatoes and Collard Greens! Here are the recipes which have been shared down to all SFAs via our Health-e-pro recipe database:
This salad can be easily modified and remain in the dark green subgroup if you use equal measurements of spinach and/or Romaine lettuce (if you feel the collard content is too heavy)
